Purpose of Position:

  • Assists the Chef de Partie Pastry in effectively managing onboard pastry and bakery production, ensuring compliance with company standards.
  • Provides guidance, training, and support to the pastry team to maximize productivity.
  • Ensures safe, high-quality pastry production and fosters a guest-oriented service culture to enhance guest satisfaction and repeat business.

Responsibilities:

  • Possess advanced pastry and baking skills, capable of running a Galley section independently with minimal supervision.
  • Manage daily food requisitions and report provision issues to the Chef de Partie Pastry, Pastry Sous Chef, and Executive Pastry Chef.
  • Follow menus, recipes, guidelines, and production procedures as directed by the Executive Pastry Team.
  • Maintain discipline, productivity, and food quality in the assigned section.
  • Conduct recipe reviews, make necessary adjustments, and report modifications to supervisors.
  • Verify storeroom deliveries for accuracy and report discrepancies.
  • Implement economical work practices to reduce food wastage.
  • Ensure compliance with Public Health Policies and Company Regulations.
  • Maintain sanitation and cleanliness in pastry production areas.
  • Ensure readiness for Public Health Inspections from ship management or local authorities.
  • Handle garbage separation and disposal per sanitary standards.
  • Prepare mise-en-place 15 minutes before service.
  • Participate in daily team meetings ("The Daily Reunion").
  • Deliver high-quality guest service and maintain impeccable hygiene standards.
  • Wear Personal Protective Equipment (PPE) and follow safety protocols.
  • Maintain professional grooming standards as per Vikings Image and Uniform Policies.
  • Secure company property, especially during rough weather conditions.
  • Show flexibility and adaptability, maintaining a positive attitude under pressure.
  • Gain knowledge of ports of call, shore excursions, and shipboard activities.
  • Support achieving Culinary Department goals (quality and financial).
  • Follow safety and security policies, participating in fire prevention and evacuation drills.

Qualification (Your Profile)

  • Minimum 5 years of baking experience, including 2-3 years as an Assistant CDP Pastry or similar role in a premium hospitality environment.
  • OR a formal culinary education plus at least 1 year of experience as an Assistant CDP Pastry in a 5-star hospitality environment.
  • Advanced pastry and baking skills, including sugar work, chocolate work, and specialized pastry techniques.
  • Fluent in English excellent communication skills for interpreting menus and recipes.
  • Flexible, stress-resistant, team player, with a strong work ethic.
  • Guest-focused, service-oriented, with a professional appearance and impeccable hygiene standards.
  • Proficiency in executing tasks efficiently and productively.
  • Excellent knowledge of Public Health and Sanitary Policies.
  • Minimum age of 21 years.
  • Ability to physically handle 50+ lbs. (30 kg) daily and work a minimum of 11 hours per day, 7 days a week.
  • Previous cruise industry experience is an advantage.
