Position: 1st Cook Butcher (Cruise Ship)

Job Summary:

The 1st Cook Butcher is responsible for the preparation and portioning of all meats, poultry, and seafood used in the ships galleys. This position plays a crucial role in maintaining food quality, safety, and consistency across all dining venues. The butcher ensures efficient inventory usage and compliance with food safety standards.

Responsibilities:

  • Cut, trim, bone, and portion meats, poultry, and seafood according to specifications
  • Ensure accurate portion control and proper storage of all protein products
  • Maintain daily production levels based on forecast and galley needs
  • Follow hygiene and sanitation standards in accordance with HACCP protocols
  • Label and rotate all products according to FIFO (First-In, First-Out)
  • Clean and sanitize butcher room, equipment, knives, and tools regularly
  • Collaborate with Executive Chef and Sous Chefs to forecast protein needs
  • Ensure compliance with onboard safety and food handling regulations
  • Supervise and train assistant butchers or junior staff as required

Qualifications:

  • Minimum 23 years of professional butchery experience in a hotel, resort, or cruise ship
  • Certification or training in culinary arts or meat preparation preferred
  • Strong knowledge of different meat cuts, portioning techniques, and yield optimization
  • Familiar with industrial meat processing equipment and knife handling
  • Good understanding of food safety and sanitation (HACCP)
  • Physically fit and able to lift heavy items and work in cold storage areas
  • Able to communicate in basic English (spoken and written)
  • STCW and Food Safety certifications preferred (can be arranged before joining)
