Job Description Sommelier
Purpose of Position:
- Assists the Beverage Manager in ensuring the efficient operations of all bar areas.
- Creates a guest-oriented service culture to enhance guest satisfaction, repeat business, and profitability.
Responsibilities:
- Promote wine pairings and packages to generate revenue beyond inclusive wines and beverage packages.
- Ensure bar charges are correctly applied, and no open checks remain at the end of the business day.
- Conduct wine training sessions for F&B staff and organize wine tastings and special lectures for guests.
- Adapt wine lists according to available stock and local wines.
- Collaborate with the Beverage Manager to source local wines for an enhanced guest experience.
- Suggest updates for the Beverage Department and contribute to SOP development.
- Monitor and report breakages, maintenance issues, and upkeep of wine cabinets, cellars, and bar areas.
- Ensure proper glassware, mise-en-place, and bar operations during meal services and special events.
- Maintain cost controls, inventory, and stock rotation in coordination with the Beverage Manager and Inventory Manager.
- Ensure bar inventories and stock declarations comply with local customs regulations.
- Maintain cleanliness and equipment sanitation in accordance with Public Health Policies.
- Lead and support a multi-cultural team, ensuring crew satisfaction, productivity, and retention.
- Conduct daily team briefings ("The Daily Reunion") for operational updates and STAR Service alignment.
- Personally ensure guest comfort and high-quality beverage service.
- Participate in crew performance evaluations, training, and compliance with MLC (Maritime Labor Convention).
- Wear appropriate Personal Protective Equipment (PPE) and follow safety procedures.
- Maintain grooming standards as per Vikings Image and Uniform Policies.
- Ensure company property security, especially in rough weather conditions.
- Handle HR-related matters professionally, aligning with Vikings Policies and Code of Conduct.
- Demonstrate flexibility, adaptability, and professionalism under pressure.
- Gain knowledge of ports of call, shore excursions, and shipboard activities.
- Support achieving Bar Department KPIs (quality and financial goals).
- Follow safety and security protocols, participating in training, fire prevention, and evacuation drills.
Qualification (Your Profile)
- Minimum 2 years of experience as a Chief / Head Sommelier or Cellar Master in a premium hospitality or restaurant environment.
- Shipboard experience in the Sommelier position is required.
- Internationally recognized Certified Sommelier Level I required, Level II or Master Sommelier preferred.
- Ability to work independently.
- Fluent in English excellent communication skills (additional languages are an advantage).
- Experience in leading multi-cultural teams.
- Flexible, stress-resistant, team player with a strong work ethic.
- Guest-focused, service-oriented, with a professional appearance and impeccable hygiene standards.
- Excellent knowledge of Public Health Policies.
- Strong leadership, motivational, and coaching abilities.
