Purpose of Position:

  • Assists the Restaurant Manager in ensuring efficient food and beverage (F&B) operations, maintaining productivity, quality, and guest-service standards in accordance with Vikings STAR Service Standards.
  • Independently manages restaurant outlets, while coaching and developing the Restaurant Team.
  • Creates a friendly, guest-oriented service culture to enhance guest satisfaction and repeat business, contributing to increased revenue and profitability.

Responsibilities:

  • Plan, schedule, and assign staff to relevant sections.
  • Conduct daily menu presentations and assist in organizing ship functions and special F&B events.
  • Greet and welcome guests, ensuring their comfort and well-being while on duty.
  • Manage and control guest reservations and seating arrangements, ensuring smooth table service.
  • Communicate guest allergies and special dietary needs to the Galley and Restaurant Team.
  • Ensure professional and efficient collaboration with the Executive Chef, Galley Team, and Bar Team.
  • Conduct accurate monthly inventories and assist the Restaurant Manager in creating durable orders.
  • Monitor and manage restaurant cost budgets, inventory, and stock takes.
  • Maintain Restaurant Pest Management Logs in accordance with Public Health Policies.
  • Provide feedback to the Restaurant Manager regarding team performance and service improvements.
  • Ensure that all mise-en-place is prepared 15 minutes before service.
  • Minimize equipment loss/damage and ensure cleanliness standards are met.
  • Monitor the Time & Attendance System in compliance with Maritime Labor Convention (MLC) 2006.
  • Lead and support a multi-cultural team, maximizing crew satisfaction, productivity, and retention.
  • Participate in "The Daily Reunion" team meetings for operational updates and service alignment.
  • Implement a culture of ownership and responsibility, ensuring proper staff training and motivation.
  • Conduct performance reviews, training, and succession planning, ensuring compliance with MLC regulations.
  • Wear Personal Protective Equipment (PPE) and follow proper lifting techniques.
  • Maintain professional grooming standards as per Vikings Image and Uniform Policies.
  • Secure company property, particularly during rough weather conditions.
  • Demonstrate flexibility and adaptability, maintaining a positive attitude under pressure.
  • Stay knowledgeable about itinerary ports, shore excursions, and shipboard activities.
  • Support achieving Restaurant Department KPIs (quality and financial goals).
  • Follow safety and security policies, participating in fire prevention and evacuation drills.

Qualification (Your Profile)

  • Minimum 2 years of experience as a Head Waiter, Assistant Maître d, or similar position in a premium hospitality environment.
  • Previous shipboard experience in this position is required.
  • Minimum age of 21 years.
  • Physically fit and in good health.
  • Fluent in English excellent communication skills for leading teams and interacting with guests.
  • Ability to speak additional languages is an advantage.
  • Experience leading multi-cultural teams, with strong teamwork and coaching abilities.
  • Flexible, stress-resistant, team player, with a strong work ethic.
  • Guest-focused, service-oriented, with a professional appearance and impeccable hygiene standards.
  • Thorough knowledge of Public Health Policies and sanitation standards.
