Purpose of Position:

  • Assists the Head Baker in controlling and maintaining bakery production, ensuring quality standards align with company regulations.
  • Requires advanced professional baking skills.
  • Ensures safe, high-quality pastry production and fosters a guest-oriented service culture to enhance guest satisfaction and repeat business.

Responsibilities:

  • Adhere to menus, recipes, methods, and specifications, rectifying any discrepancies immediately.
  • Manage bread production for breakfast, lunch, and dinner in all outlets, ensuring quality and freshness.
  • Master bread decorations for buffets and special occasions as required by the Executive Chef and Executive Pastry Chef.
  • Regularly communicate with the Provisions Team to optimize the use of highly perishable food items.
  • Ensure proper transportation of provisions from storerooms to outlets with the correct utensils.
  • Countercheck daily storeroom deliveries for accuracy.
  • Provide training and guidance to team members to maximize productivity.
  • Implement economical work practices to reduce food wastage.
  • Ensure compliance with Public Health Policies and Company Regulations, enforcing a clean-as-you-go policy.
  • Handle garbage separation and disposal according to sanitary standards.
  • Prepare mise-en-place 15 minutes before service.
  • Participate in daily operational meetings ("The Daily Reunion").
  • Deliver high-quality guest service and maintain impeccable hygiene standards.
  • Attend loadings (in the absence of the Head Baker) for quality control and assurance.
  • Prepare daily electronic requisitions based on guest count/forecast figures.
  • Wear Personal Protective Equipment (PPE) and follow safety procedures.
  • Maintain professional grooming standards as per Vikings Image and Uniform Policies.
  • Secure company property, especially during rough weather conditions.
  • Show flexibility and adaptability, maintaining a positive attitude under pressure.
  • Gain knowledge of ports of call, shore excursions, and shipboard activities.
  • Support achieving Culinary Department goals (quality and financial).
  • Follow safety and security policies, participating in fire prevention and evacuation drills.
  • Be capable of taking over the Head Bakers role when required.

Qualification (Your Profile)

  • Minimum 5 years of professional baking experience, including 1 year as a Baker in a premium hospitality environment.
  • Previous culinary education is an advantage.
  • Strong understanding of European bakery techniques.
  • Excellent hands-on baking skills, with the ability to exceed expectations.
  • Fluent in English excellent communication skills for interpreting menus and recipes.
  • Flexible, stress-resistant, team player, with a strong work ethic.
  • Guest-focused, service-oriented, with a professional appearance and impeccable hygiene standards.
  • Excellent knowledge of Public Health and Sanitary Policies.
  • Minimum age of 21 years.
  • Ability to physically handle 50+ lbs. (30 kg) daily and work a minimum of 11 hours per day, 7 days a week.
  • Previous cruise industry experience is an advantage.
