Location: Onboard / International Operations
Job Purpose:
The Chief Cook is responsible for planning, preparing, and serving nutritious and well-balanced meals for the ships crew. This role ensures the cleanliness of galley areas and compliance with hygiene and food safety standards onboard.
Key Responsibilities:
- Plan daily menus and prepare meals (breakfast, lunch, dinner) for all crew members, including special dietary needs when required.
- Manage food provisions and maintain inventory of stores and supplies.
- Supervise galley staff (e.g., Messman) and ensure kitchen operations are smooth and efficient.
- Ensure proper food storage, labeling, and rotation (FIFO method).
- Maintain cleanliness and hygiene in the galley, food preparation, and storage areas.
- Follow onboard sanitation procedures and comply with maritime food safety standards (e.g. HACCP, MLC 2006).
- Prepare food for emergencies (e.g., lifeboat rations, storm meals).
- Assist in preparing meal cost reports and requisitions for new supplies.
- Participate in safety drills and understand emergency duties as per the ships muster list.
Requirements:
- Certificate of Competency or Training in Maritime Cooking (per STCW Reg. III/6 or national equivalent)
- Valid STCW Basic Safety Training Certificate
- Medical Certificate and Seamans Book
- Minimum 2 years of experience as a cook at sea
- Knowledge of international cuisine and nutritional planning
- Basic understanding of food safety, hygiene standards, and galley management
Preferred:
- Experience on commercial vessels with multinational crew
- Good communication and teamwork skills
- Familiarity with budgeting and provision management
- Training in HACCP or food safety procedures
