Job Description Assistant Baker
Purpose of Position:
- Assists the Baker and Head Baker in producing bakery goods on time, ensuring quality standards and procedures align with company regulations.
- Requires professional bakery knowledge and skills.
- Ensures safe, high-quality production and fosters a guest-oriented service culture to enhance guest satisfaction and repeat business.
Responsibilities:
- Possess basic professional baking skills and prepare bread rolls, Danish pastries, various breads, and simple showpieces.
- Follow menus, recipes, guidelines, and methods as provided by the Head Baker.
- Maintain expected food quality standards under supervisor guidance.
- Ensure economical work practices, reducing food wastage.
- Adhere to Public Health Policies and company regulations, enforcing clean-as-you-go habits.
- Maintain equipment sanitation and proper storage per Public Health Policies.
- Handle garbage separation and disposal, ensuring adherence to sanitary standards.
- Prepare mise-en-place for bakery operations 15 minutes before service.
- Participate in daily team meetings ("The Daily Reunion").
- Provide high-quality service and maintain hygiene standards, following Vikings STAR Service Standards.
- Wear Personal Protective Equipment (PPE) and follow safety measures.
- Maintain professional grooming standards per Vikings Image and Uniform Policies.
- Secure company property, especially during rough weather conditions.
- Adapt to different bakery sections for training and operational needs.
- Follow safety and security policies, participating in fire prevention and evacuation drills.
Qualification (Your Profile)
- Minimum 2 years of experience as an Assistant Baker or similar position in a premium hospitality environment.
- OR a professional culinary education plus 6 months of experience as an Assistant Baker or similar position.
- Basic professional baking skills.
- Ability to safely handle baking equipment.
- Fluent in English excellent communication skills for interpreting menus and recipes.
- Flexible, stress-resistant, team player, with a strong work ethic.
- Guest-focused, service-oriented, with a professional appearance and impeccable hygiene standards.
- Eagerness to learn and comply with Public Health and Sanitary Policies.
- Minimum age of 21 years.
- Ability to physically handle 50+ lbs. (30 kg) daily and work a minimum of 11 hours per day, 7 days a week.
- Previous cruise industry experience is an advantage.
