Position: 1st Cook Bakery (Cruise Ship)

Job Summary:
The 1st Cook Bakery is responsible for producing high-quality bread, rolls, pastries, and other baked goods for guests and crew onboard. Working under the guidance of the Chief Baker and Executive Chef, this role ensures the daily production of fresh bakery items in accordance with Royal Caribbeans culinary standards.
Responsibilities:
- Prepare and bake a variety of breads, rolls, and pastries according to standard recipes and production schedules
- Assist the Chief Baker in organizing daily production and managing baking staff
- Monitor proofing, baking times, and oven temperatures to ensure consistent quality
- Ensure proper handling, storage, and rotation of ingredients
- Maintain a clean and sanitary bakery area in compliance with HACCP and shipboard safety standards
- Inspect equipment regularly and report maintenance needs
- Coordinate with kitchen and restaurant teams for timely delivery of baked goods
- Train and guide junior bakers and utility personnel
Qualifications:
- Minimum 23 years of experience as a baker or pastry cook in a hotel, bakery, or cruise ship environment
- Formal training or certification in baking or pastry arts is preferred
- Good knowledge of dough fermentation, proofing, baking techniques, and international bread varieties
- Familiarity with food safety standards (HACCP)
- Able to work independently and manage high-volume production
- Physically fit and able to work long hours in a fast-paced environment
- Able to communicate in basic English (reading, speaking, and writing)
- STCW and Food Safety Level II certifications preferred (can be arranged pre-departure)
