Our esteemed client, an iconic ultra-luxury resort nestled in the pristine beauty of the Maldives, is seeking a passionate and experienced Executive Pastry Chef to lead and elevate its Bakery and Pastry operations. This role will oversee the full production and creative direction of all pastry offerings across multiple outlets, ensuring alignment with the resorts luxury standards, brand specifications, and profitability goals. Working closely with the Executive Chef, the Executive Pastry Chef will drive innovation, maintain exceptional quality and presentation, implement strong cost control measures, and inspire a high-performing team to deliver world-class culinary experiences in a remote island setting.

Requirements:

  • Proven experience as an Executive Pastry Chef or Senior Pastry Chef within a luxury resort or five-star hotel environment.
  • Degree or Diploma in Culinary Arts, Patisserie, Bakery, or a related discipline.
  • International certification in Patisserie and Bakery is considered an advantage.
  • Demonstrated strong leadership and team management capabilities.
  • Creative flair with exceptional attention to detail and artistic presentation skills.
  • Solid understanding of cost control, menu development, and kitchen administration.
  • Experience managing multi-outlet pastry operations is preferred.
  • Excellent communication skills with a strong commitment to quality and excellence.
  • Previous experience in remote island or resort destinations is an added advantage.

Key Responsibilities:

  • Lead and manage all Bakery and Pastry production as the Production Manager within the Food & Beverage Department.
  • Oversee daily operations of the Pastry Kitchen & Bakery to ensure smooth, efficient, and organized workflow.
  • Ensure all pastry and bakery products across multiple outlets consistently meet established luxury standards and brand specifications.
  • Collaborate closely with the Executive Chef on menu development, seasonal concepts, and innovative dessert offerings.
  • Develop, standardize, and maintain recipes, portion control, and presentation guidelines to ensure quality consistency.
  • Monitor food cost, control wastage, and manage inventory to achieve profitability targets and budget compliance.
  • Supervise, train, mentor, and motivate the pastry team to maintain high performance and continuous professional development.
  • Maintain strict compliance with food safety, hygiene, and HACCP standards at all times.
  • Oversee purchasing processes, supplier coordination, and quality control of pastry and bakery ingredients.
  • Drive creativity and innovation in artistic presentation, dessert design, buffet displays, and specialty items.
  • Ensure efficient production planning to support all outlets, special events, banquets, and VIP functions.
  • Prepare administrative reports including cost analysis, staffing schedules, performance evaluations, and operational planning.
  • Support the promotion and positioning of pastry offerings to enhance guest satisfaction and overall dining experience.
  • Maintain high standards of cleanliness, organization, and equipment maintenance within the pastry and bakery sections.
