Our client, a 5* international luxurious beachfront retreat with a majestic mountain view, is actively seeking a dynamic and visionary Director of Restaurants to lead and elevate the resort's multi-venue dining operations. The ideal candidate will bring extensive experience in luxury hospitality and gastronomic dining (Michelin-level or Michelin Key outlets), a strong sense of service excellence, and the ability to craft exceptional culinary and guest experiences that reflect the resort's refined standards.
Requirements:
- Proven experience as a Restaurant Manager or Food & Beverage Manager in luxury hotels, resorts, or fine-dining establishments.

Strong background in gastronomic or Michelin-starred restaurants, with a deep understanding of elevated service standards and refined culinary concepts.

Demonstrated ability to lead and inspire multi-outlet restaurant teams, ensuring consistent excellence across all venues.

Exceptional guest engagement and service recovery skills, with a natural sense of hospitality and attention to detail.

Strategic and financial acumen, including budgeting, forecasting, cost control, and revenue optimisation.

Excellent leadership, communication, and interpersonal skills, capable of managing diverse teams and collaborating with culinary leadership.

Up-to-date knowledge of global dining trends, wine programs, and mixology innovations.

Fluency in English is required; additional languages are a plus.
Key Responsibilities:
- Oversee the day-to-day operations of all restaurants, bars, and lounges, ensuring exceptional service, ambience, and quality.
- Work closely with the Executive Chef to design, implement, and elevate dining concepts aligned with the brand's vision.

Maintain and enhance the property's gastronomic reputation, supporting Michelin-level service and culinary experiences.

Develop and implement operational standards, service protocols, and guest experience enhancements across all outlets.

Drive financial performance, monitoring key metrics such as revenue, cost of sales, labor costs, and profitability.

Lead, train, and mentor restaurant managers and teams to uphold consistent luxury service delivery.

Engage with guests regularly to gather feedback and ensure personalised, memorable dining experiences.

Collaborate with marketing and PR teams to promote restaurant concepts and events, strengthening brand visibility.

Ensure full compliance with health, safety, and hygiene regulations in all outlets.

Continuously explore innovations and trends to position the restaurants as market leaders in luxury dining.
