About the job Director of Food & Beverage
Our client is a 5‑star luxury resort within an international chain located on Fiji's Coral Coast, recognised as one of the most reputable brands in the area. They are seeking a dynamic and experienced Director of Food & Beverage to lead and elevate the overall dining and beverage operations, drive exceptional guest experiences, strengthen operational performance, and oversee multiple luxury outlets within the resort.
Requirements:
- Proven experience in a senior Food & Beverage leadership role within 5* luxury hotels or resorts for a minimum of ten years of experience.

Strong international exposure, preferably in the Maldives, Caribbean, or other tropical island destinations.

Previous background as Multi-Outlet Manager, Beverage Manager, F&B Operations Manager, or similar leadership roles for a minimum of five years of experience at the managerial level.

Solid understanding of luxury resort operations, including restaurants, bars, beach clubs, in-room dining, and events.

Demonstrated ability to lead and manage large multicultural F&B teams effectively.

Strong financial acumen with experience in budgeting, forecasting, cost control, and revenue optimisation.

Excellent guest engagement skills with a strong focus on service excellence and luxury hospitality standards.

Proven track record in developing innovative dining and beverage concepts to enhance guest experiences.

Hands-on leadership style with the ability to drive operational efficiency and team performance.

Strong knowledge of beverage operations, wine service, cocktail programs, and premium outlet management is highly preferred.

Experience working with international guests and understanding diverse market expectations.

Excellent communication, leadership, and interpersonal skills.

Ability to work in a remote island environment and adapt to resort-based operations.
- Fluent English communication skills, both written and verbal.
Key Responsibilities:
- Oversee the overall Food & Beverage operations across all outlets, ensuring exceptional service standards and guest satisfaction.

Lead, mentor, and develop the F&B team to achieve operational excellence and a strong service culture.

Manage daily operations of restaurants, bars, in-room dining, banquets, and other F&B facilities within the resort.

Drive revenue growth through strategic planning, innovative dining concepts, promotions, and upselling initiatives.

Monitor and control departmental budgets, forecasting, food cost, beverage cost, and labor expenses to maximize profitability.

Ensure all outlets consistently meet luxury hospitality standards, hygiene regulations, and brand expectations.

Collaborate closely with Executive Chef and other department heads to deliver seamless guest experiences.

Develop and maintain beverage programs, wine lists, and outlet concepts aligned with international luxury resort standards.

Analyze guest feedback, market trends, and operational performance to continuously improve service delivery.

Conduct regular training and performance evaluations to maintain high team productivity and engagement.

Ensure compliance with health, safety, sanitation, and licensing regulations across all F&B operations.

Build strong relationships with suppliers and vendors to maintain quality products and cost efficiency.

Support recruitment, onboarding, and succession planning within the Food & Beverage division.

Prepare operational reports, business reviews, and strategic plans for senior management.
