We are seeking a highly motivated and experienced Director of Culinary to join the team of our client.

As the Director of Culinary, you will be responsible for : 

  • Designing with creativity the menus of each and every outlet by respecting the quality standards
  • Managing the food production process and storage for each outlet, banquet, seminar and special events
  • Ensure the best use of the working tool provided
  • Report and follow guidelines set by the Group

The location is on an island: Sardinia

Key Responsibilities

Main tasks

  • Prepare the F&B budget and forecast,  with the Director of F&B
  • Control expenses based upon the budget
  • Select and assess all suppliers in terms of quality and price relevance
  • Comply with the budget allocated to the department
  • Manage & control the management team
  • Support the operational marketing in order to reach turnover and cost targets
  • Comment and forecast the next month operation based on the monthly report
  • Set management incentives based on goals
  • Update the management objectives according to the Resort activity
  • Sustain the quality culinary standard
  • Ensure that Policies and Procedures - P&P- and Standards Operating Procedures - SOP are respected
  • On a weekly basis check on the outlets consumption and needs in order to be pro-active
