Job Purpose

To ensure that all aspects of the restaurant are in a healthy state. To be a good problem solver and always prevent any bad situations. To serve first and foremost the best interest of the Company; applying management techniques to keep a high-spirited and united team. To be excellent in understanding customers needs and providing the best dining experience to all at every visit.
To lead by example and be fair and just, have substantial menu knowledge and always address in a clear and respectful way. To assist Senior Management in increasing sales, controlling costs, organising HR-Accounting files and follow-through of SOPs.

Job Responsibilities


Hiring, Training & Management


  • To always lead by example and safeguard the Company standards, SOPs, internal rules & policies
  • Execute and follow through the instructions given by the Senior Management
  • In charge of running FOH team interviews, trials, hiring, inductions & trainings
  • Lead by example and monitor teams attendance, punctuality, and grooming
  • Actively manage the FOH team to ensure the smooth running of the restaurants daily operations
  • Oversee efforts and take part in the completion of the store cleaning schedule
  • Ensure a hazard-free, clean, tidy and hygienic environment at all times
  • Operate as a safeguard in times of crisis, giving orders clearly and calmly
  • Conduct weekly team meeting with the FOH team and daily briefings
  • Responsible for training upselling techniques to the team to increase shop revenues
  • Ensure sufficient stock levels and mise en place across the restaurant and bar for service
  • Arrange & monitor staff breaks
  • Promote work harmony and efficient communication between FOH and BOH
  • Review employee performance and report to Senior Management
  • Sanction any employee gross misconduct, be responsible for employee dismissal

Guest Satisfaction & Revenues

  • Assess and review customer satisfaction, develop interactions with regular guests
  • Contribute to increasing revenues & guest loyalty by providing excellent customer service
  • Know the menus inside out to prevent food allergy accidents, provide recommendations and upsells
  • Control consistency of foods & beverages served (presentation, portion sizes)
  • Monitor foods & beverages waiting times, communicate to customers when delays occur
  • Optimise the use of the Bookings & Table Management System as well as Delivery Solutions
  • Greet and pay special attention to VIPs & KOLs tables
  • Handle guest complaints and make sure that guests leave the restaurant satisfied or impressed
  • Keep safe, and record any customer lost belongings

Restaurant Orders & Admin Work

  • Ensure the restaurant & bar has the necessary supplies to operate, arrange weekly orders
  • Keep the restaurant & bar order lists, internal forms and checklists easily accessible and up-to-date
  • Plan cost-effective staff rosters, following Companys quotas and budget line
  • Record changes in teams working times for salary computations
  • Closely monitor overtimes, DOs, SHs, ALs and arrange for clearing
  • Carry out monthly restaurant & bar inventory, including glassware, silverware and other valuables
  • Monitor petty cash use, sort invoices by bundles and update computer ledgers
  • Do the part-timers cash payments, daily cash out reports and cash sales bank deposits
  • Be in control of the restaurant cash and other valuables, avoid any possible loss / theft
  • Report equipment defects, breakages and low-running items (china, glass, silver) to Senior Management
  • Contact external contractors for restaurant repair & maintenance needs including kitchen
    Assist when possible in the maintenance of equipment to avoid unnecessary repairs and purchases
    Handle government visits (Immigration, FEHD, Fire Authority) and report to Top Management
