Job Brief:
- Specialized in Kaiseki cuisine with Michelin 2 or 3 stars background
- Strong communication skills with customers during opening hours
- Strong management skills in terms of manage kitchen and staff.
- Flexibility to utilize limited ingredients as Australia has very limited ingredients compared to Hong Kong, Singapore and Japan.
- Plan and direct food preparation and culinary activities Modify menus or create new ones that meet quality standards Estimate food requirements and food/labor costs
- Arrange for equipment purchases and repairs Recruit and manage kitchen staff
- Rectify arising problems or complaints Give prepared plates the final touch Perform administrative duties
- Comply with nutrition and sanitation regulations and safety standards Keep time and payroll records
- Reporting, including food cost and labor cost
- Maintain a positive and professional approach with coworkers and customers requirements.
- Organizing special events, such as collaboration with other chefs or special theme events.
- Generate ideas to help with revenue
