MASTER BAKER – PRODUCTION LEAD (INDUSTRIAL BAKERY OPERATIONS)
Job Description:
Role Overview;
The Master Baker will take full ownership of end-to-end bakery production, from recipe development and process optimization to team leadership and quality assurance.
You will operate at the intersection of technical expertise and production management, ensuring consistent output, minimal waste, and uncompromising quality.
Key Responsibilities;
- Lead and oversee daily bakery production across breads, pastries, and specialty products
- Manage and optimize semi-automated production processes, including rotary oven operations
- Plan and execute daily and weekly production schedules aligned to demand forecasts
- Supervise all stages of production: mixing, fermentation, proofing, and baking
- Develop, refine, and standardize recipes to ensure consistency and product innovation
- Maintain strict quality control standards across all products
- Lead, train, and manage bakery staff, ensuring discipline, efficiency, and skill development
- Monitor inventory and coordinate procurement of ingredients and supplies
- Enforce food safety, hygiene, and sanitation standards in compliance with regulations
- Troubleshoot production issues and implement process improvements in real time
- Drive cost control initiatives by minimizing waste and optimizing ingredient usage
- Maintain production records, reporting, and operational documentation
- Ensure proper maintenance and efficient use of bakery equipment
Key Requirements;
- Minimum 10 years' experience in bakery production (non-negotiable)
- Proven experience in high-volume or industrial bakery environments
- Hands-on experience with semi-automatic production lines and rotary ovens (mandatory)
- Strong technical mastery of bread and pastry production processes
- Demonstrated ability to lead teams and manage production under pressure
- Experience in recipe standardization, quality control, and process optimization
- Strong understanding of food safety and hygiene standards
- Excellent organizational and problem-solving skills
