Job Title:Director Food & Beverage

Location - Colombo 08

Primary Responsibilities

• Ensure the business performance of the restaurant, month on month as per budgets.
  
• Maintain food and beverage costs as per predetermined ratios assigned from the budget and obtain maximum usage of food through daily planning.
• Ensure a high level of member care is achieved at all times measured by the member satisfaction levels.
  
• Preparation of effective rosters considering the daily peak times and weekly peak days to ensure efficient customer service is carried out.
• Organize and manage all club house events staffing, including discipline and training
  Maintain all relevant food safety and hygiene standards at all times.
  
• Achieve high levels of cleanliness and hygiene in the premises
• Managing all aspects of the food & beverage (F&B), kitchen and restaurants services
• Responsible to maintain an adequate stock of cutlery, crockery and glassware at the restaurant and bar
  to maintain highest standard of Service and efficiency. Monitor Breakages, losses and replacements.
• Check the availability of the menu items on a daily basis and ensure that items are available.
  
• Brief all relevant staff on available and non-available menu items on a daily basis.

Knowledge, Experience, Skills & Character Qualities

• Professional qualifications from a recognized University/Hotel School
• Minimum 5 to 7 years relevant experience in similar position
• Ability to tactfully handle members and team members
  
• Possess character qualities of : Attentiveness, thoroughness, orderliness, gentleness,
  enthusiasm, creativity, decisiveness and persuasiveness
