Role Overview

We are seeking a technically strong and hands-on Production Manager to lead daily production activities, shop-floor operations, production planning, food safety compliance, OEE improvement, yield optimization, and shift-level workforce management within a food processing environment.

The selected candidate will be responsible for ensuring efficient production, timely output delivery, GMP and food safety compliance, production data accuracy, and smooth coordination across production, quality, maintenance, stores, procurement, and dispatch functions.

Key Responsibilities

Production Planning and Scheduling

• Develop and execute daily, weekly, and monthly production plans in line with sales orders and inventory targets.
• Coordinate with procurement, stores, and dispatch teams to ensure timely availability of raw materials, packaging materials, and finished goods.
• Plan manpower, machine allocation, production schedules, and shift requirements to meet output targets efficiently.
• Monitor production progress against approved plans and take corrective action for deviations.
• Maintain production MIS, including output reports, downtime logs, batch records, variance analysis, and performance updates.
• Provide regular production updates and reports to the Factory Manager.

Shift and Shop-Floor Management

• Oversee shift operations across raw material intake, processing, filling, packaging, and dispatch staging.
• Ensure smooth shift handovers with proper documentation and clear communication of pending issues.
• Remain actively present on the shop floor during critical production runs, start-ups, changeovers, and line trials.
• Manage shift supervisors, operators, and contract labour to ensure productivity, discipline, and operational efficiency.
• Resolve shop-floor issues such as equipment stoppages, process deviations, manpower gaps, and production delays in real time.
• Ensure all production activities are carried out safely, efficiently, and according to approved SOPs.

OEE and Yield Optimization

• Track and improve Overall Equipment Effectiveness across production lines.
• Monitor availability, performance, and quality rates to identify production improvement opportunities.
• Identify and reduce production losses caused by downtime, speed loss, rejects, rework, and material wastage.
• Drive yield improvement initiatives for coconut milk extraction, UHT processing, and aseptic filling operations.
• Implement lean manufacturing, Kaizen, 5S, and continuous improvement practices on the shop floor.
• Report weekly OEE and yield performance with root-cause analysis and improvement plans.

GMP, Quality and Food Safety Compliance

• Ensure strict adherence to Good Manufacturing Practices and Good Hygiene Practices across all production areas.
• Implement and monitor HACCP controls, critical control points, and food safety SOPs at each stage of production.
• Ensure production activities comply with FSSAI regulations and customer-specific quality requirements.
• Drive food safety awareness and hygiene discipline among shop-floor teams.
• Support internal audits, customer audits, and third-party audits.
• Ensure timely closure of non-conformances, corrective actions, and preventive actions.
• Maintain proper documentation for food safety, production quality, batch records, and compliance requirements.

Team Leadership and Coordination

• Lead, guide, and motivate shop-floor teams, shift supervisors, operators, and contract workers.
• Ensure production teams understand targets, quality expectations, safety standards, and operational priorities.
• Coordinate closely with quality, maintenance, supply chain, procurement, stores, and dispatch teams.
• Support training and development of shop-floor employees on production processes, hygiene, safety, and SOPs.
• Build a disciplined, accountable, and performance-focused production culture.
• Escalate operational risks and unresolved issues to the Factory Manager when required.

Candidate Profile

• B.Tech / B.E. in Food Technology, Dairy Technology, Chemical Engineering, or Mechanical Engineering.
• M.Tech / M.Sc in Food Science or Dairy Technology will be an added advantage.
• Diploma holders with strong and relevant shop-floor experience in food or dairy processing may also be considered.
• Minimum 5 to 8 years of hands-on production management experience in a food processing plant.
• Direct experience in Dairy Plant Operations and/or UHT Processing is mandatory.
• Experience in Coconut Milk or Coconut Cream manufacturing will be strongly preferred.
• Exposure to Aseptic Manufacturing or Aseptic Filling Lines will be highly desirable.
• Proven experience managing shop-floor teams, shift supervisors, operators, and contract labour.
• Familiarity with OEE tracking, production MIS, Lean, Kaizen, and 5S practices.
• Strong technical knowledge of UHT processing, pasteurisation, homogenisation, and aseptic systems.
• Ability to independently manage multi-shift and multi-line production operations.
• Sound understanding of GMP, HACCP, FSSAI, and food safety compliance requirements.
• Strong analytical skills with the ability to read production data, identify trends, and drive improvements.
• Strong leadership and people-management skills.
• Excellent problem-solving ability and ability to remain calm under production pressure.
• Proficiency in production reporting tools and basic ERP or MES systems.
• Tamil proficiency is essential for shop-floor coordination.
• Good English communication skills are required for reporting and management updates.
• Hands-on, disciplined, accountable, and committed to delivering production targets without compromising quality.
