Duties & Responsibilities

Key Outputs / Responsibilities

Food Quality and Standards

  • Overall responsibility for the standards of the food product on the island, including guest and staff food.
  • Ensure all food presentation and standards align with the Styling Guide and lodge food identity.
  • Take the food product and experience on the island to the next level across all areas, including:
    • Dishes
    • Menus
    • Guest experiences
    • Kitchen controls
    • Staff food
  • All food going out to guests must be checked by the Head Chef or Sous Chef.

Kitchen Operations

  • Implement kitchen standards and make regular visits to the staff kitchen and canteen.
  • Maintain excellent stock control, ordering processes, stock rotation, and stock management.
  • Ensure proactive maintenance of kitchen equipment and handle ordering where necessary.
  • Maintain a high standard of hygiene and a clean work environment.

Menu Development

  • Create seasonal menus based on:
    • Guest dietary requirements
    • Guest preferences
    • Seasonal produce available.

Staff Development and Management

  • Develop and train chefs to improve their individual skills and support promotion opportunities where possible.
  • Manage departmental administrative duties, including:
    • Staff files
    • Off-day schedules
    • Hygiene standards.
  • Promote good discipline and fair treatment within the department and the lodge overall.
  • Act as a role model for the team.

Budget and Sustainability Management

  • Manage departmental budgets and work within set budget targets.
  • Monitor and support company sustainability goals and waste management within the department.

Communication and Coordination

Maintain excellent and regular communication with:

  • All chefs
  • Heads of Department
  • Lodge Management
  • Suppliers
  • Guests

Guest Interaction

  • Meet guests on arrival whenever possible.
  • Learn and remember guests' names and understand their dietary requirements and expectations.
  • Maintain regular interaction with guests to build relationships and gather feedback.
  • Ensure awareness of special dietary requirements for both guests and staff.

Collaboration

Maintain strong interaction with our Food Fundis, including:

  • Inviting feedback
  • Exchanging ideas
  • Being open to suggestions
  • Sharing experience

Desired Experience & Qualification

Qualifications and Experience Required

  • Must hold formal culinary qualifications (minimum Diploma).
  • Minimum 2 years of management experience, preferably within a 5-star hospitality operation.
  • Ability to work under pressure.
  • Excellent and consistent attention to detail.
  • Must be guest-focused, positive, committed, hardworking, and eager to learn.

  • Strong day-to-day and long-term management skills
  • Ability to motivate staff to consistently deliver

  • Good knowledge of hospitality operations, including:
