We are seeking a skilled and passionate Sushi Chef (Production) to join our growing Japanese restaurant team. The ideal candidate has hands-on experience in sushi production within a high-volume restaurant or central kitchen and is committed to delivering consistent quality while maintaining the highest standards of food safety and hygiene.
Key Responsibilities:
- Prepare sushi ingredients, including rice, seafood, vegetables, sauces, and garnishes according to company recipes and standards.
- Produce sushi rolls, nigiri, sashimi, and other menu items with consistency, accuracy, and attention to presentation.
- Ensure proper food handling, storage, labeling, and rotation following HACCP and food safety guidelines.
- Monitor ingredient quality and report any shortages or quality issues.
- Maintain cleanliness and organization of the production area, equipment, and utensils.
- Work efficiently in a fast-paced environment while meeting daily production targets.
- Support the kitchen team in maintaining smooth operations and continuous product quality.
Requirements:
- Previous experience as a Sushi Chef or Sushi Production Chef in a Japanese restaurant or central kitchen.
- Good knowledge of sushi preparation techniques, knife skills, and food safety standards.
- Ability to follow standardized recipes and production procedures.
- Strong organizational skills, attention to detail, and ability to work under pressure.
- Positive attitude, reliability, punctuality, and a team-oriented mindset.
