About the Role
A leading 5-star property seeks a passionate Sous Chef to support the Executive Chef in managing kitchen operations, maintaining culinary excellence, and upholding food safety standards.
Key Responsibilities

Supervise daily kitchen operations and lead service in the Head Chef / Executive Chefs absence

Oversee food preparation, quality control, plating, and consistency

Support menu development and cost control

Manage stock, portioning, and supplier coordination
Support, guide and train junior kitchen staff in food preparation, cooking and plating
- Make sure all food is prepared to the correct standards, recipe and presentation

Enforce hygiene and HACCP standards as per South African food safety regulations

Train and mentor junior chefs and kitchen staff
Requirements
-
Accredited Culinary Qualification (minimum NQF Level 5 or above)

3-5 years experience in a fine-dining or 5-star kitchen

Proven leadership and communication skills
Ability to work well under pressure in a team environment
Attention to detail and pride in food quality

Knowledge of HACCP and R638 food safety compliance
Valid drivers licence and own reliable transport

Must be eligible to work in South Africa (valid work permit if foreign national)
