About the Role
A leading 5-star property seeks a passionate Sous Chef to support the Executive Chef in managing kitchen operations, maintaining culinary excellence, and upholding food safety standards.

Key Responsibilities

  • Supervise daily kitchen operations and lead service in the Executive Chefs absence

  • Oversee food preparation, quality control, plating, and consistency

  • Support menu development and cost control

  • Manage stock, portioning, and supplier coordination

  • Enforce hygiene and HACCP standards as per South African food safety regulations

  • Train and mentor junior chefs and kitchen staff

Requirements

  • Accredited Culinary Qualification (minimum NQF Level 5 or above)

  • 3-5 years experience in a fine-dining or 5-star kitchen

  • Proven leadership and communication skills

  • Knowledge of HACCP and R638 food safety compliance

  • Must be eligible to work in South Africa (valid work permit if foreign national)
