Nova Maldives is seeking a passionate F&B Manager to join our soulful island resort!

About the Role:

Reporting directly to the General Manager, you will be responsible for the seamless operation and strategic development of all our Food & Beverage outlets. As this is a hands-on, leadership role, it requires you to have a proactive approach to maintaining our high standards of service, quality, and guest satisfaction.

What You'll Do:

  1. Manage the daily operations of all food and beverage outlets including restaurants, bars, lounges, in-villa dining, and special events to ensure exceptional guest experiences.
  2. Design and implement innovative F&B concepts, menus, and service offerings aligned with the resort’s brand and guest expectations.
  3. Ensure consistent delivery of high service standards through regular training, team monitoring, and guest engagement.
  4. Lead and manage a multicultural team including supervisors, bartenders, waiters, and kitchen support staff, fostering a motivated and high-performing team culture.
  5. Collaborate with the Executive Chef and Bar Manager to plan and roll out seasonal menus, special promotions, and themed events.
  6. Develop and manage departmental budgets, ensuring cost control and financial targets are met while maintaining service excellence.
  7. Oversee stock and inventory management processes to ensure availability of all items while controlling wastage and loss.
  8. Drive revenue growth through upselling strategies, guest engagement, and implementation of creative promotions and dining experiences.
  9. Ensure all F&B operations adhere to hygiene, safety, and sanitation standards as per set policies and local health regulations.
  10. Actively seek and respond to guest feedback, resolving complaints and using insights to enhance future service delivery.
  11. Coordinate with key departments such as Kitchen, Housekeeping, Events, and Front Office to ensure smooth operation and service consistency.
  12. Manage the planning and execution of weddings, group functions, and special events, ensuring operational excellence and guest satisfaction.
  13. Monitor global and regional F&B trends to enhance the resort’s offerings and maintain a competitive edge.
  14. Cultivate a strong team spirit through regular briefings, recognition programs, and an inclusive work environment.
  15. Proactively identify and resolve operational issues, ensure preparedness for emergencies, and continuously seek areas for improvement.

What We're Looking For:

  • Minimum 5–7 years of experience in F&B operations, with at least 2–3 years in a managerial role in a luxury resort.
  • Proven track record of managing multiple dining outlets.
  • Strong knowledge of international cuisines, beverage service, and modern F&B trends.
  • Excellent leadership, communication, and interpersonal skills.
  • Customer-focused with a passion for delivering exceptional guest experiences.
  • Manages time effectively and pays close attention to detail.
  • Acts with professionalism and integrity at all times.
  • Proactively addresses challenges with sound judgment, maintaining calm and delivering efficient solutions.
