Job Summary:
The Cost Controller is responsible for monitoring and controlling all hotel expenditures, ensuring the accuracy of cost allocations, minimizing wastage, and optimizing financial performance. The role involves close collaboration with purchasing, kitchen, F&B, and other operational departments to ensure all costs are tracked, analyzed, and reported in a timely and accurate manner.
Key Responsibilities:

Monitor and control all cost-related processes within the hotel, including F&B, housekeeping, engineering, and other operational areas.

Conduct daily and monthly cost audits of consumption, stock levels, spoilage, wastage, and inventory.

Maintain accurate records of all inventory transactions and ensure that physical stock matches system records.

Coordinate monthly stock-take procedures and investigate any discrepancies.

Analyze cost variances and report findings to management with actionable recommendations.

Assist in the preparation and review of departmental budgets and forecasts.

Implement cost control procedures and best practices to minimize operating expenses.

Review supplier invoices and purchase orders for price and quantity accuracy.

Monitor recipe costing and pricing for F&B items to ensure profitability.

Support procurement in evaluating suppliers and negotiating prices.

Prepare and distribute regular cost reports (e.g., daily cost report, monthly inventory report).

Assist with internal and external audits related to costing and inventory.

Maintain up-to-date knowledge of industry trends and cost-saving innovations.
Qualifications & Skills:

Bachelors degree in Accounting, Finance, or a related field.

Minimum 23 years of experience in a similar role, preferably in the hospitality industry.

Strong knowledge of cost control procedures, inventory management, and F&B operations.

Proficiency in accounting software and hotel management systems (e.g., Opera, Micros, Sun, FMC, or similar).
