Job Title: Sushi Sous Chef


Reports To: Head Sushi Chef / Executive Chef

Job Summary:

We are seeking a skilled and passionate Sushi Sous Chef to support our Head Sushi Chef in daily kitchen operations. The ideal candidate has a strong background in sushi preparation, excellent knife skills, and experience managing kitchen staff in a high-volume, fast-paced environment. This role plays a key part in ensuring quality, consistency, and creativity in every sushi dish we serve.

Key Responsibilities:

  • Assist the Head Sushi Chef in food preparation, service, and kitchen supervision.

  • Prepare sushi and sashimi with precision, artistry, and adherence to quality and safety standards.

  • Manage  place for sushi station, ensuring all ingredients are prepped and stored properly.

  • Oversee junior kitchen staff and sushi apprentices, providing guidance and training as needed.

  • Maintain inventory of fish and sushi ingredients; assist with ordering and receiving supplies.

  • Ensure food safety, hygiene, and cleanliness standards are upheld in all kitchen areas.

  • Collaborate in menu planning, including daily specials and seasonal items.

  • Monitor portion control, waste reduction, and kitchen efficiency.

  • Step into the Head Chefs role during absences or off-hours.

Qualifications:

  • 5+ years of experience in a sushi-focused kitchen, with at least 1 year in a leadership or supervisory role.

  • Advanced knife skills and deep knowledge of sushi preparation techniques.

  • Understanding of Japanese ingredients, cuisine, and presentation aesthetics.

  • Strong leadership and communication skills.

  • Food Handler Certification (or local equivalent).

  • Ability to work nights, weekends, and holidays as needed.

Preferred Skills:

  • Experience with fine-dining sushi.

  • Knowledge of Japanese language and culinary terms is a plus.

  • Familiarity with seafood sustainability practices.
