About the job Head of Brand Hungry Kitchen
Reporting line: General Manager Hungry App
The Head of Brand Hungry Kitchen has a primary responsibility of leading HK operations, innovation, sales, marketing, and people.
This is a hand-on role: majority of the time needs to be spent in stores, while also working with other teams. He/she must possess strong Chef development and innovation skills, as well as sales, Cogs and marketing leadership, and leading/growing team skills.
(1) Lead operations and innovation
● Actively lead the kitchen cook with a strong Chef Development mindset: consistently create/adjust products, calculate/optimize the COGS, train the team, etc. with a go-to-market marketing mind (right taste, right look and feel, right portion, right price, right photo shoot, etc.). Actively implement the new products in the POS system, working with procurement, accounting, and system support teams
● Manage all kitchen operations and trainings as per EFG’s standards and best industry practice (cooking, stock ordering, monthly inventory, SOP, manage the team, manage/optimize the roster, hygiene and safety standards, quality audits, crisis management, etc.)
● Own the P&L to provide strong business performance, including sales growth, COGS and labor optimization, smart marketing spent
(2) Drive Sales & Marketing
● Develop annual strategy: budget, operating plan, marketing and resources. Manage the day-to-day execution
● Lead online and offline marketing execution to drive sales (Facebook, Tik Tok, influencers, foodpanda Ads, front store branding, etc.)
● Evaluate sales trends and take appropriate action plans. Create new brands with a go-to-market mind, analyze results from data, lead improvements of product offerings. Conduct periodic review of menu, inventory and propose appropriate adjustments (menu engineering). Know the best sellers and innovative around them. Move out slow movers. Learn from every experience
(3) Lead People
● Conduct appropriate resource planning for the Brand, including recruitment, hiring, promoting, coaching, and retaining talents. Create a multi-task team, able to handle all Hungry Kitchen operations aspects
● Work in close partnership with internal and external stakeholders (marketing, accounting, procurement, etc.)
(4) Perform other duties as assigned by General Manager/Managing Director
Financial Responsibilites
'• Drive sales, optimize COGs and operating costs to delivery positive net bottom line
• Set up new brands and dishes in the system, incl. COGs calculation
• Work closely with Purchasing to agree item specifications and to provide guidance and expertise in the product
• Identify cost reduction opportunities across the businesses
• In conjunction with General Manager and Marketing teams, determine opportunities to maximize revenue opportunities
Travel Requirement
• Between stores and production units
Job Requirement
• Background knowledge/ certification/ apprenticeship in F&B industry as a Chef/kitchen manager, for both international franchised and own brand businesses. Good HACCP knowledge is a plus.
• Experience of working and developing menus in a quality driven and diverse, commercial, multiple project environment.
• Proven track record in food production with a focus on food production and quality.
• Clear track record of culinary skills in a commercial environment with focus on cost management and cost analyzing teams
