About the job Head Bakery
This is a full-time hybrid role for the Head of Bakery at TOUS Les JOURS, stationed in Phnom Penh with some work-from-home flexibility. The Head of Bakery will be responsible for overseeing all bakery operations, including baking, food preparation, and quality control of products like bread and cookies. They will manage bakery staff, ensure compliance with health and safety standards, and innovate new bakery products to meet customer demands. Additionally, they will develop and execute production schedules to enhance efficiency and productivity.
=>Responsibilities
Production Planning: responsible for developing and implementing production plans that ensure that the bakery is able to meet customer demand while maintaining high quality standards. This includes forecasting demand, developing production schedules, and managing inventory levels.
Staffing: responsible for hiring, training, and supervising bakery staff. This includes developing and implementing training programs, coaching and mentoring staff, and evaluating performance.
Quality Control: responsible for ensuring that all baked goods meet the highest standards of quality and freshness. This includes developing and implementing quality control procedures, inspecting baked goods, and taking corrective action when necessary.
Food Safety: responsible for ensuring that the bakery complies with all food safety regulations. This includes developing and implementing food safety procedures, training staff on food safety procedures, and conducting regular food safety audits.
Cleanliness and Sanitation: responsible for maintaining a clean and sanitary work environment. This includes developing and implementing cleaning and sanitation procedures, ensuring that all equipment is properly cleaned and sanitized, and inspecting the bakery on a regular basis.
Inventory Management: is responsible for managing inventory levels of ingredients and supplies. This includes forecasting demand, placing orders, and receiving and storing inventory.
Equipment Maintenance: responsible for ensuring that all bakery equipment is properly maintained and in good working order. This includes scheduling regular maintenance checks, identifying and reporting problems, and working with vendors to resolve equipment issues.
Marketing and Promotion: responsible for developing and implementing marketing and promotional strategies to increase sales. This includes creating new products and promotions, developing marketing materials, and managing social media accounts.
Special Events and Catering: responsible for working with other departments to coordinate special events and catering requests. This includes developing menus, coordinating with staff, and ensuring that all orders are met on time and to budget.

- Experience in Bakery and Baking skills
- Expertise in Food Preparation, including cookies and bread
- Strong management and leadership skills
- Knowledge of health and safety standards in food production
- Excellent organizational and time management skills
- Ability to work both independently and as part of a team
- Prior experience in a similar role is an advantage
- Skills in Production Planning and Production Management
- Experience in Operations Management and Team Management
- Proficiency in Budgeting
- Excellent organizational and leadership skills
- Strong problem-solving and decision
- Bachelor's degree in Culinary Arts, Food Science, or a related field is preferred
