At the workshop, they specialise in crafting 16 varieties of dream doughnuts, each inspired by the elegance of French patisserie. We are seeking a skilled Pastry Chef specialising in jams, creams, fillings, and doughs to join this kitchen. You will play a key role in creating a wide range of desserts and pastries, ensuring the highest quality in both taste and presentation. Key Responsibilities:
- Prepare and execute a variety of creams such as crème pâtissière, ganache, diplomat cream, and Chantilly cream.
- Craft perfect doughs, including sable and cookie doughs, balancing texture and flavour.
- Masterfully create meringues in French, Swiss, and Italian styles for use in desserts and decorations.
- Apply expert techniques in caramel-making, managing caramelisation to achieve the desired colour, flavour, and consistency.
- Collaborate closely with the kitchen team to ensure all products meet high standards of quality and food safety.
- Use and maintain specialised equipment such as mixers, whisks, ovens, and thermometers with precision.
Requirements:
- 3-5 years of experience in a professional kitchen, with a strong focus on creams, jams, and doughs.
- Proven expertise in crafting high-quality creams, including emulsification, whipping, tempering, and stabilisation techniques.
- Strong knowledge of dough preparation, including creating sable doughs and various cookie doughs.
- Extensive experience in working with meringues and caramel, achieving optimal texture and flavour.
- Ability to experiment with new techniques and ingredients, ensuring innovative and exciting pastry creations.
