ROLE OVERVIEW

A leading large-format retail group is seeking a highly experienced Senior Butchery Manager with proven experience managing hypermarket-level butchery operations (NOT standard supermarket format).

This is a senior operational leadership role requiring hands-on management of:

• High-volume production environments

• Large butcher teams

• Complex stock & shrinkage control

• Multi-million rand monthly turnover

This is NOT a standard store butchery manager role.

NON-NEGOTIABLE REQUIREMENTS

Applications will ONLY be considered if candidates meet ALL of the following:

Minimum 8–10+ years senior butchery management experience
Proven experience managing BUTCHERY within a HYPER / large-format retail store
Experience managing large teams (20+ staff)
Strong GP, shrinkage and waste control experience
Full production planning experience (high volumes)
Deep knowledge of meat cuts, block tests, yields and margin control
Strong supplier & procurement exposure
Experience working within corporate retail structures
Must be based in Gauteng
Must be available for interview on short notice

KEY RESPONSIBILITIES

• Full operational control of hyper butchery department

• Manage high-volume production & demand planning

• Control wastage, shrinkage & GP margins

• Oversee hygiene, food safety & compliance standards

• Manage staffing, scheduling & labour costs

• Ensure stock availability & promotional readiness

• Manage block tests & yield optimisation

• Drive department profitability

• Report into senior operations management

• Lead and develop butchery teams
