About the job Food Technologist

Client - Start-up by 3 IIT Graduates with over 70 years of experience, specializing in synthetic biology and precision fermentation. They engineer microbes to produce high-value nutritional ingredients and alternative proteins. They recently raised over USD 13 Million to scale-up business rapisly

Role Overview

This role focuses on bridging the gap between nutritional requirements, consumer taste expectations, and scalable manufacturing. As a specialist, you are the technical expert on sweetener chemistry and behavior.

Key Responsibilities

  • Recipe Formulation: Design and iterate prototypes using artificial/intense sweeteners to achieve the desired sweetness without compromising taste, mouthfeel, or bulk.
  • Synergy Optimization: Blend various high-intensity sweeteners to mask bitter aftertastes and mimic the temporal profile of sucrose.
  • Ingredient Sourcing: Vet and select optimal sweetener raw materials from Example Global Ingredient Supplier to minimize cost and maximize quality.
  • Sensory Evaluation: Conduct and analyze taste tests to evaluate consumer acceptance.
  • Regulatory Compliance: Ensure all formulations adhere to strict FDA, EFSA, or FSSAI safety limits and labeling requirements.
  • Shelf-Life Testing: Monitor how sweeteners degrade over time and impact the product's overall shelf life and stability.
  • Scale-Up Operations: Transition recipes from a laboratory setting to mass manufacturing, troubleshooting production lines.

Core Qualifications

  • Education: Bachelor's or Master's degree in Food Science, Food Technology, or Chemical Engineering.
  • Experience: Typically 2–5+ years in product development, with a strong focus on zero-calorie/dietary formulations.
  • Sweetener Knowledge: Deep understanding of the physiochemical properties (heat stability, pH tolerance) of high-intensity sweeteners.
  • Analytical Skills: Proficiency with analytical lab equipment (e.g., HPLC) and sensory evaluation methods.
