About the role
We are recruiting two experienced Sous Chefs to support the Head Chef in leading a high-functioning kitchen team. The Sous Chefs rotate schedules, ensuring one is always present, with a structure designed to protect work-life balance (4 to 5 days on / ~4042 hours per week).
This role is operational and people-focused: you will be hands-on during service, responsible for quality control, team leadership, and smooth execution.
This role suits chefs who thrive in volume while remaining composed and quality-driven, with 80100 lunch cover and 100+ dinner cover services.

Responsibilities
Lead daily kitchen operations alongside the Head Chef
Oversee service execution, quality control, and consistency across all sections
Taste and monitor dishes during service to maintain standards
Ensure all sections are service-ready and working efficiently
Support ordering and stock control as required
Train, mentor, and guide a team of 810 chefs per shift
Maintain a calm, firm, and respectful leadership presence in a fast-paced environment
Contribute creatively to menu evolution and new dish development
Uphold food safety, hygiene, and workplace standards
About you
Minimum 57 years in professional kitchens, including previous experience as a Sous Chef or Senior CDP / Junior Sous in a high-volume restaurant.
Strong technical ability in Italian cuisine both traditional and modern styles
Calm, hands-on leadership style with excellent communication skills
Comfortable managing a busy kitchen with multiple sections and daily specials
Reliable, well-organised, and focused on continuous improvement
A team player with a desire to grow, take ownership and develop others
Fluent English is not mandatory
Italian experience or heritage is a plus, but not essential.
