About the role

As the Sous Chef, you will play a pivotal role, serving as the second-in-command to the Head Chef. You will oversee the kitchen in the Head Chef's absence and act as the communication link between the chef and the brigade. This is a unique opportunity to collaborate with charcutiers, chefs, and pastry chefs to produce in-house prepared items for their prestigious stores.

Responsibilities

  • Preparation and Production: Assist in preparing various charcuterie products such as sausages, terrines, pâtés, and smoked meats.
  • Supervision and Mentorship: Supervise chefs and other charcuterie team members to ensure consistent and high-quality execution.
  • Hygiene and Food Safety: Ensure all hygiene and food safety standards are met during preparation and production.
  • Recipe Creation: Collaborate with the head charcutier to develop new recipes and improve existing methods.
  • Order and Stock Management: Monitor stock levels and place orders to ensure all necessary ingredients are available.

About you

  • Over 8 years of experience in high-end establishments, preferably in premium retail.
  • Strong knowledge and skills across charcuterie, cooking, and pastry, with the ability to cover for colleagues.
  • Preferred expertise in charcuterie techniques, including curing, smoking, and other preparation methods.
  • Proven leadership experience with supervision and mentorship abilities.
  • High attention to detail to maintain exceptional quality standards.
  • Strong work ethic and sense of duty.
  • Intermediate English proficiency at a minimum.
  • Genuine passion for quality produce.
  • Desire to learn and grow professionally.
